Baked Eggs with Leeks

Most people tend to steer away from Leeks, thinking they are the tougher, larger cousin of the green onion, but that’s simply not true. The Leek gets a fantastic mild flavor when they are cooked down, with almost a floral undertone. These are easy to prepare dishes that can go from your oven to the table in no time, for a make ahead, go ahead and steep the leeks in cream the night before to cut your cooking time in half.
