Hassleback Potatoes

No Hassle potatoes?

You may not want to try to Hassle the Hoff, but I promise you, you are going to want to try Hassleback potatoes. These are easy, tasty, and make a great presentation. This is a good one to keep in your pocket for any meal, not just special occasions.  I mean look at that beauty (insert potato here). Its crispy skin and creamy flesh is just the thing to get anyone’s attention, right?

Ingredients

  • 4 Russet Potatoes
  • 6 tablespoons Butter, melted, or Olive Oil
  • ¼ cup Fresh bread crumbs
  • To taste Salt, pepper, garlic powder
  • Toppings Sour Cream, chives, bacon bits, shredded cheese, the works!

What you do with them:

  • Preheat oven to 400°F (204°C)
  • Put each potato between two wooden spoons, or chopsticks
  • Cut across at about ¼-inch (.6 cm) intervals
  • Cut each potato not quite through so they are still joined together at the bottom
  • Heat butter over medium high heat and add cut potatoes
  • Heat until sizzling
  • Season with salt and pepper
  • Roast 15 to 20 minutes, basting every 5 minutes
  • Sprinkle with bread crumbs, baste with butter
  • Cook until bread crumbs are golden and potatoes are soft, 10 to 15 minutes
  • Top with favorite toppings and serve
